A simit is a ring of bread dipped in grape molasses and covered in sesame seeds, then baked crisp outside and soft inside. Sellers carry them on trays on their heads or sell them from red glass carts on the street corners and the ferry quays, for a few lira each.
People in Istanbul eat it for breakfast or on the way, with a glass of black tea, white cheese or nothing at all, and on the ferries they throw the last bits to the gulls that follow the boat. Ride through Istanbul in 3D ›
