Bistecca alla fiorentina
A huge T-bone steak, grilled over coals and served rare, by the kilo.
The bistecca alla fiorentina is a T-bone steak cut at least three fingers thick, traditionally from Chianina cattle, grilled over hot coals with only salt, pepper and olive oil.
It is served rare, priced by weight, and usually shared: one steak weighs well over a kilo.
